Black Bean Fajitas



 Black Bean Fajitas


I don't really have a recipe for them since I just usually throw it together for a quick meal.  But I'll tell ya how I make them.


You'll Need:

Tortillas
1 can Black Beans, undrained
Cumin
Cilantro
3 Cheese Mexican Blend
Olive Oil

Place the Black Beans in a pot and add about a teaspoon of Cumin and a tablespoon of Cilantro (fresh is best if you have it).  Bring to a low boil and simmer for about 5 minutes.  With a slotted spoon dip out enough Black Beans to cover one Tortilla.



Then spread the Mexican Cheese over the Black Beans and top with a second Tortilla.  



Next heat a little Olive Oil in a skillet.  Add your Fajita and cook about 2 minutes on each side over medium heat.



That's it!  Simple, easy, quick and healthy, if you use the right ingredients.
